Mix dries, except butter. Then cut in butter. Mix wets. Add wets
to dries in two batches, don't over-mix or it will be dry.
- 3C flour
- 2C sugar
- 4t baking powder
- 3/4C butter (or unsalted butter + 1/2t salt)
- 5 egg whites
- 1 whole egg
- 1C whole milk
- 2.25t vanilla
Makes two 9x9 circular pans. Cook at 350 for 25 minutes, then check
every 2min to see if a toothpick/knife comes out clean. Let cool.
