Peach Cake

(Works well with other fruit too, especially blackberries. Our family calls it "peach cake" regardless of fruit content.)

Dries:

Wets:

(Instead of the egg white powder, water, and butter you can also use 4 eggs)

Others:

Preheat oven to 375F.

Mix water and egg white powder to let it rehydrate. Chop fruit, and put in greased 9x13 pan. You're going for about a 1" layer of fruit. Mix dries together, wets together, then all together. Pour over fruit. The batter will look scant, which is fine: this cake is about the fruit.

Bake 375 for maybe 55min until brown. The cake parts (but not the fruit) will read 200F. Note that a knife will come out clean from ~175F, but that's too early.
