Dough: Topping:

Start about two hours before dinner.

Mix dough. Ideally let sit to autolyse ~20min. Knead. Cover bowl with damp towel, set to rise in a warm location for 45-60min or until ~2x.

Spread dough over large baking sheet. Cover again, let rise ~20min.

Preheat oven to 400 F. Poke holes with fingers. Brush on oil, add salt and rosemary. Bake ~20min.
