Makes two 9x9 circular pans. Cooks in ~25min at 350F. Bake until a toothpick comes out clean.
If making cupcakes, makes 24 full-size cup cakes. Expect it to be done in more like 15min.
If you're serving it with a non-chocolate frosting, consider doubling thr cocoa powder and putting some chochocolate chips in the bottom.
Fine to make in advance and freeze.
Mix dries and wets separately. Add boiling water to wets, then mix it all together. Don't over-mix or it will be dry. Once the boiling water is in the cooking has already started, so get it in the oven quickly.
