Chocolate Cake

Makes one 9x9 circular pan or 1doz cupcakes.

Preheat oven to 350F, grease pan.

Dries

• 1 1/4C flour
• 1C sugar
• 1t baking soda
• 1/2t salt

Wets

• 1/3C cocoa powder
• 1/3C oil
• 1t vinegar
• 1 cup boiling water

Mix dries and wets separately. Microwave wets until near boiling. Mix wets and dries together. Don't over-mix or it will be dry, but you don't want lumps either. Pour into pan, bake until the top is no longer glossy and a knife comes out clean. Usually ~16min for cupcakes or very thin layers, ~20min for thicker layers.
