Calzone

Dough: Mix yeast, sugar, a little water. Let sit for a minute, then add the rest of the water. Let sit for 5min.

Add the first third of flour, mix thoroughly. Add next third, mix with hands. Add the rest of the flour gradually, mixing with hands. Knead for 5min. Leave covered in oil-brushed bowl for 45min to rise.

Filling ideas: sausage, cheese, tomato sauce, onions, garlic, peppers. For vegan filling, drain black beans, then mix with a little flour until dry. You want roughly 9 cups of filling.

When the dough is done rising, punch it down. Grease baking sheet. Roll out ~8in circles, fill. Bake for ~35min at 375F.
