Baked Chicken

Take bone in skin on chicken thighs, and marinate in salty acidic water. A day is good, but even 20 minutes is better than nothing.

Pat dry, rub with oil, rub with spices and flour.

Preheat oven to 400F.

Optionally, cover a baking sheet with cut up vegetables (tomatoes, onions, potatoes, etc).

Put chicken on top of the vegetables (or directly on the tray if no vegetables) and bake until it temps (165F). About 35min (check at 30min), less if no skin.
